Here's a simple recipe for rice pudding which is wonderfully comforting. With our current wave of cold weather, what could be nicer than to come home to a warm bowl of rice pudding, with a dollop of jam and maybe a little spritz of whipped cream. I've experimented with lots of different recipes, but this is my daughter's all time favourite and comes courtesy of the catering ladies at The Manor School.

5 min preparation, 1 - 2 hours in the oven
Ingredients
2 oz pudding rice
2 oz caster sugar
1 pint milk (semi skimmed)
1 tsp vanilla essence
Knob of butter
cinnamon (optional)
Directions
Preheat oven 150 C
Place all the ingredients in an oven proof dish and stir to combine. Place in a preheated oven and bake for 1 - 2 hours, stirring ocassionally.
