Big Ruthie's Apple Compote

Another Gluten-free cooking for kids recipe

Heaven, heaven, heaven.  Serve this delicious apple compote with yoghurt, double cream or of course as an accompaniment to latkes.

Ingredients

6-8 green apples (granny smith), peeled, cored and cut into quarters
100g light brown sugar
1 tsp ground cinnamon
A pinch of nutmeg
Freshly squeezed juice of 1/2 lemon

Directions

Place the prepared apples in a medium saucepan.  Add 150ml (1/4 pint) of water and cook over medium heat for 15- 20 minutes until the apples are soft.  You may need to add a bit more water so keep an eye on them to make sure they don't scorch.  If you do need to add more water add only enough to keep the mixture moist and to prevent it from burning. 

When the apples are soft, remove from the heat and add the sugar, mashing down the apples to make a chunky puree.  Add the cinnamon and lemon juice.  Taste and add more sugar or lemon juice as required.  Place in a bowl and refrigerate until needed.  Serve the compote either warm or cold.
