Pizza Express Style Dough Balls

Garlic Dough Balls gf jpeg.jpgIt's not often that I wake in the night with an aha! moment, but two nights ago, I certainly had one.  I had been deliberating on what to make for a children's tea party on Friday evening.  The mind of a product developer (that's me by the way) works in mysterious ways.   I was thinking of something to serve with a big bowl of pasta and the idea of garlic bread flickered through my mind. I put this thought to one side, as store bought gluten free bread just simply doesn't do it for me.  So sometime in the wee hours of the morning, I woke up with this idea, Pizza Express Style Dough Balls made with my pizza dough recipe. (Check out the recipe for "Quick Pizza" in the recipe section).

Next morning, with the vision firmly implanted in my brain, I set out to recreate those dough balls. To make life easier, I purchased some ready made garlic butter at Waitrose.  That was a good move.  Then  Garlic Butter gf jpeg.jpg instead of rolling the dough out, I shaped it into balls and baked them for 15 minutes until they were lightly coloured but still soft. They glowed seductively through the oven door window.  I brushed them with a garlic butter as they came out of the oven and then added a few extra dollops on top for good measure.  Mama Mia!  I know it's not good form to blow your own trumpet, but these were as good if not better then the Pizza Express ones.  The smell was heavenly and the flavour and texture were spot on.  Light, slightly chewy and oozing garlicky butter, these little babies will be strutting their stuff again at lunch tomorrow.  I can see them sitting happily alongside a bowl of olives as pre-lunch nibbles.  Please try them and let me know what you think.  And if anyone from Pizza Express is reading this......nothing would make me happier, than to see these gluten free dough balls on your menu.

Garlic dough balls

I had a meagre serving of these (there were only two left) upon my return from the office on Friday night - but by God they were delicious, lighter than the P.E. version but "moreish" - I hate that expression but, "a man cannot live by 2 dough balls alone"!
